A recent study by Oklahoma State University polled consumers and found they are willing to pay more for some meats.
The monthly Food Demand survey saw an increase in the willingness to pay more for steak, pork chops, deli ham and chicken wings, but consumers lowered the amount they were willing to pay for hamburger and chicken breasts.
In December, food-grocery expenditures were $94.05, down less than 1 percent from November. Consumers spent $49.04 on food consumed away from home, down 1.74 percent from November. The survey notes that E. coli, salmonella, and GMOs remained the most visible issues in the news over the past two weeks.
The largest percentage jump in awareness from November to December was about “gestation crates.”
The largest percentage fall in issue awareness was about "hormones." Taste, safety and price remained consumers' most important values when purchasing foods.
